It’s pumpkin everything season and while I am not the biggest fan of pumpkin lattes and pumpkin pie, I do love a nice slab of pumpkin bread which is why I came up with my chocolate chunk pumpkin bread. Most pumpkin breads available at coffee shops and grocery stores are full of preservatives, artificial flavors and allergens like nuts and dairy, not this one! This recipe is nut free, dairy free and grain free, made with real pumpkin puree – the only ingredient being pumpkin. The pumpkin pie spice I use is pretty simple to whip up, you can get that recipe HERE. I bet you have all 4 ingredients in your pantry already, plus homemade is always better.

Chocolate Chunk Paleo Pumpkin Bread Recipe (dairy free, nut free, grain free)
- 1 cup pumpkin puree
- 5 eggs
- 1/3 cup of palm shortening
- 1/2 cup coconut flour
- 1/2 cup coconut sugar or organic cane sugar
- 1/2 tablespoon vanilla extract
- 1 tablespoon pumpkin pie spice (make your own with this recipe HERE)
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup chocolate chunks <— I use these allergy friendly chips, they are nut free, soy free, dairy free…basically just chocolate, yum.
Pre-heat oven to 400 degrees. In a bowl add pumpkin puree, eggs and vanilla, mix using a immersion blender like this one HERE. Melt the palm shortening in a small glass bowl then set aside. In another bowl, add your dry ingredients: coconut flour, coconut sugar or cane sugar, pumpkin pie spice, baking soda and salt then whisk together. Now we are ready to combine. Add the dry ingredients to the pumpkin puree mix slowly and using that immersion blender, blend together. Lastly add the melted palm shortening and mix well with a fork. Use parchment paper in your pan to make clean up easier, I was out..boo. If you don’t have parchment paper use a little palm shortening to grease your pan then pour the mix to your bread pan or baking pan of choice. Sprinkle the chocolate chunks on top and bake at 400 degrees for about 30minutes. Check on your loaf at 30 minutes and using a wood stick or knife poke the middle, if it comes out clean, it’s ready, if it doesn’t then give it another 5 minutes. Don’t let your loaf burn! Keep in mind that all ovens are different and depending on what part of the world you live in, the baking time may be different. Once it’s ready, let it cool and enjoy!
