Salads: Love them or hate them? I love salads. Especially on days when I haven’t eaten all of my veggies, salads are a nice way to get back on track. We all know that salads are healthy but not everyone thinks they are delicious and I think it’s because of the dressing. I have never been a huge fan of store bought dressings. Most have a vegetable oil base which immediately eliminates them as an option for me, vegetable oils cause inflammation and I don’t know about you, but that is the last thing I need. Use olive oil as a base and a couple of other items and you can dress up a salad as well as any fancy restaurant. This weekend, I whipped up this healthy avocado salad dressing and it is delicious. This salad dressing is creamy and the balsamic vinegar makes it nice and tangy. How do you dress up your salads? Tell me in the comments!
– 1 medium avocado
– 4 tablespoons of olive oil
– 2 tablespoons of balsamic vinegar
– 2 lemons
– salt to taste
Pit the avocado and place in a bowl, squeeze lemon juice into bowl, add olive oil and balsamic vinegar. Blend with a immersion blender (like this one) or you can also use your blender, pulse until smooth. Enjoy! This keeps nicely in the fridge for a few days.
Nutrition Tip: Dark leafy greens are rich in fiber, folate, and carotenoids, they also contain vitamins C and K and minerals like iron and calcium. Vitamin K is a fat soluble vitamin so you need to include some fat in the mix so your body can absorb it…this is where the olive oil comes in handy.
