How to host a healthy taco Tuesday? Can you even say HEALTHY and TACO in the same sentence? I think so!
First, you have to start by switching #tacotuesday from that dingy taqueria that you not-so-secretly go to – way too often, to your home. Invite your friends over and get to cooking. Don’t worry, tacos require basic cooking skill, you know, the kind you’ve absorbed by watching your mom and grandma cook all your life.
Trust me, you can do this.
You will need to make three decisions:
- What kind of tacos? I’m talking meat. Chicken, steak, veggie? decide.
- What sides to use? You need salsas but will you also make guacamole? Beans? Rice?
- Drinks? Alcoholic, non-alcoholic? Regardless, you want to make your own healthy drinks.
Let’s say you’ve opted for beef…
Sides? Can’t go wrong with guacamole….
…and you H A V E to make a salsa…
Drinks? Start by saying no to soda, give it up forever. Opt for mineral water or make agua de limon and use real lemons – none of that concentrate crap.
Here are some extra tips for making this a healthy taco Tuesday:
Use your favorite vegetables. I like to use radishes, butter lettuce, onions, cilantro. Think simple, there is no need to get complicated with this one. Just pile on the veggies and this taco Tuesday thing gets an instant healthy boost.
Did you know that almost 90% of corn in the U.S is genetically modified? Which means, odds are all of the conventional tortillas out there are make with genetically modified corn – this is not the corn your parents and grandparents are back in the homeland. Traditionally, tortillas are made with finely ground maize and lime, water and salt. Today, tortillas are made with a handful of extra ingredients to keep them from going bad. These are the ingredients in a Guerrero corn tortilla: Corn Ground, treated with, Lime, Water, Cellulose Gum, Propionic Acid (To Preserve Freshness), Benzoic Acid (To Preserve Freshness), Phosphoric Acid (Preservative), Dextrose, Guar Gum, Amylase. In order to avoid these additives, opt for organic tortillas or you could have lettuce wrapped tacos or a taco bowl with rice.
Organic dairy cows are healthier because their diet is more natural them, pasture and organic feed along with sunshine keeps cows healthy and happy. Keeping the cows healthy makes for healthy dairy products. Trust me, once you choose to try organic dairy you won’t go back to conventional. I have recommended organic dairy to friends and family that considered themselves to be lactose intolerant and they have done great on organic dairy. As it turns out, they are not lactose intolerant – they just don’t tolerate junky conventional dairy.
Use organic dairy products like cheese and sour cream.
MIX YOUR OWN SEASONINGS
Most store-bought seasonings or the seasonings that your butcher uses are full of additives and anti-cakeing agents. You can avoid these by mixing your own seasonings using sea salt and organic spices.
If you need to use an oil for cooking the meats or even in your chile, use avocado oil! That taqueria you love has a gigantic bottle of canola/corn oil in the back, can you blame them? It’s cheap. Sadly, those rancid oils are contributing to all of your health issues and stubborn weight problems. Avocado oil, olive oil, lard from pastured animals. Also, keep an eye on your oils – if the pan starts to smoke – you burned the oil and you need to start over. Burned oil is no-bueno.
