Hi my loves! Summer is quickly coming to an end. I know, I’m sad too. I not-so-secretly wish I could travel around the world following the summer, tropical beaches, delicious food, endless vitamin d from lounging in the sun…. and then my baby girl tugs at my hair violently and reality comes back. Haha. I’m not complaining, trust me, I live in San Francisco, it’s beautiful here.
Anyhoo… with the end of summer in mind, I have come up with a tasty new recipe for you! This raw avocado and cream tart is a healthy treat that everyone will love. It’s dairy free, gluten free and complies with the paleo diet and even a vegan diet…because vegans like treats too. I used my Vitamix to blend the crust ingredients but I have also used a regular blender before, you just have to help the blender along by pushing the ingredients back over the blades in between pulses, carefully. Raw Avocado and Cream Tart Recipe – (dairy free, gluten free, paleo, vegan)

- 1/2 cup of Golden Flax Seeds
- 1 cups of Slivered Almonds
- 1 cup of Coconut Flakes
- 12 Dates
- 1/2 cup of Coconut Cream
- 1 Avocados
- 3 tablespoons of Grade B Maple Syrup
- juice from two limes
Crust: Add almond slivers, flax seeds and coconut flakes to your blender or food processor, pulse until there is a good mix then add dates. Keep pulsing until the dates have mixed well. Using a spatula, move the mixture over to the pan you will be using, press the mix down flat to the bottom of the pan to form your crust. Set aside.

Filling: You can use a immersion blender (I have a simple one like this one HERE) or a regular blender for this part. Blend avocado, lime juice, coconut cream and maple syrup until its creamy. Pour over the crust and refrigerate.
