My mom makes this simple ground beef soup recipe all the time, it’s so easy and nutrient dense, perfect for this chilly winter weather! We ate pretty healthy growing up and my mom was a fast cook, I guess you have to be when you’ve got 4 kids running around. Well, I have 1 kid and I am always looking for ways to make my life easier in the kitchen, since I am not nearly as fast as my mom. I recently got an Instant Pot mostly for the pressure cooker setting. I went a little nuts and made two batches of my healing bone broth recipe but how could I not? This thing (the Instant Pot) produces a batch of bone broth in 2 hours flat and because it has a timer setting, I don’t have to worry about blowing up or burning down my kitchen! So, in order to get the best flavor/nutritious benefits in this recipe, I recommend you start by making a batch of bone broth then move on to the soup, keep scrolling to get the recipe. Enjoy!
Simple Ground Beef Soup Recipe
Prep Time: 15 minutes| Cook Time: 30 minutes | Serves 6
- 1 pound of ground beef
- 4 carrots
- 4 zucchinis
- 1 large sweet potato
- 1 medium yellow onion
- 6 cloves of garlic
- 2 cups of bone broth
- 2 tablespoons of olive oil
- optional garnish: cilantro, lime juice and jalapeños
Add olive oil to pot and warm up to medium heat. Add diced onion to the olive oil and cook them for about three minutes until slightly translucent. Add ground beef and cook for about 5 minutes until lightly brown then add all vegetables and the bone broth. Next add enough water to cover all of the ingredients and let it simmer for another 45 minutes or until all the carrots are soft. Then it’s ready!
Instant Pot Instructions:
Same as above but when you get to the cover with water part – pressure cook for 30 minutes.
