Sweet Potato Noodle and Maple Sausage Breakfast Stack
Breakfast is the most important meal of the day. It’s not up for debate. We should all be eating something before leaving the house in the morning, and by something I mean something of substance that will fuel you for at least a few hours, ideally until lunch time.
There is nothing worse than eating something super carb-e like a bagel for breakfast and then feeling like you need a nap come 10am. Or how about eating 3 servings of Special K cereal, with fat free milk and then you are hungry by the time you get to the office because Special K cereal and fat free milk is pretty much the equivalent of eating a bowl of air and water, of course you’re hungry right after! For the record, I did both of those things once upon a time, I don’t recommend it.
I do recommend that you ditch the diets and just eat real food. Pick something delicious that has a lot of veggies, protein and fat. We should all have a baseline goal of being a healthy and fully functional human being and you can easily get there by eating real food. Start with a healthy breakfast.
I like to cook big batches of food that reheats nicely. A big batch of clean sausage patties seasoned at home and a couple of sweet potatoes diced up into noodles with this nifty Spiralizer will set you up for a few days. Once you’ve prepped all you have to do is heat up and put together this yummy Sweet Potato Noodle and Maple Sausage Breakfast Stack!
Serve them with a dalop of Primal Kitchen Avocado Mayo, a side of a couple of persian cucumbers and a sprinkle of fresh cilantro and just like that you have a pretty gourmet breakfast in minutes!
Sweet Potato Noodle and Maple Sausage Breakfast Stack
SPECIAL TOOLS:
Spiralizer: I have this one HERE.
INGREDIENTS:
For patties:
- 1 pound of ground pork
- 1 tablespoon of grade b maple syrup
- 1 teaspoon of fine sea salt
- pepper to taste
- 1 tablespoon of avocado oil (to grease pan)
For sweet potato stack:
- 2 large sweet potato
- 2 teaspoons of fine sea salt
- pepper to taste
- 2 tablespoons of avocado oil
DIRECTIONS:
For patties:
In a medium bowl, all all ingredients (minus the avocado oil) and mix thoroughly. Separate into 6 balls and smash into patties. In a skillet over medium heat, add avocado oil and allow to warm up for about 1 minute then add the patties and let them cook for about 5 minutes each side or unit cooked through.
For sweet potato stack:
Peel sweet potatoes and put through your spiralizer, I have this one HERE. Add avocado oil to a skillet and heat up to medium heat for about 1 minute. Add noddles, salt and pepper. Move them around allowing them to cook evenly for about 5 minutes. The noodles will help the sweet potatoes cook very fast so keep an eye on them, don’t let them burn.
Put it together:
Stack up the noodles and sausage patties. Add a dalop of Primal Kitchen Avocado Mayo and garnish with cilantro and serve with a few persian cucumbers for some crunch.
